Because the shoulder is a well-exercised muscle, it’s naturally more tender when cooked low and slow, but it also holds up beautifully to grilling or pan-searing when marinated. Lamb shoulder steak is perfect for hearty meals, delivering deep lamb flavor with every bite.
Taste the Difference, our sheep produce a leaner meat with less external fat and marbling and have a milder taste than commerically available sheep meat. As a hair sheep they do not produce the lanolin that makes the meat gamier and fattier. Hair sheep have a less "muttony" taste.
