Our lamb shoulder steak is a flavorful, well-marbled cut that benefits from slow cooking or quick, high-heat methods to bread down its connective tissue while keeping it tender and juicy.
Lamb shoulder steaks are a versatile cut, perfectly suited for grilling, broiling, or slow cooking.
Grilled
Marinate in olive oil, garlic, rosemary, lemon juice, salt and pepper for at least 1 hour and grill on medium-high heat for 4-5 mintues per side. Let rest for 5 minutes before serving.
Braised
For fall-apart tenderness with deep flavor. Sear steak in a hot pan with oil until browned. Add onions, garlic, tomatoes, red wine and herbs. Cover and simmer on low for 2-3 hours until tender. Service with potatoes, rice or other veggies.
Slow-Cooked
For a set-it-and-forget-it meal with deep flavor place in slow cooker with broth, garlic, carrots, onions and thyme. Cook on low for 6-8 hrs or high for 3-4 hours. Shred and service over pasta, polenta or rice.

There are so many options!
Taste the Difference, our sheep produce a leaner meat with less external fat and marbling and have a milder taste than commerically available sheep meat. As a hair sheep they do not produce the lanolin that makes the meat gamier and fattier. Hair sheep have a less "muttony" taste.
We believe in happy healthy animals who are never exposed to chemicals like herbacides, pesticides and commercial fertilizers. Better feed equals healthier animals and produces a Chem Free product.
Our meet is processed and inspected according to USDA requirements.
